Low-Carb Chicken Parmesan



SERVES 4.

Ingredients

  • 2 8-oz boneless, skinless chicken breasts
  • 1 large egg, beaten
  • 1 cup grated Parmesan cheese
  • 1 tbsp Italian seasoning
  • 3 tbsp extra-virgin olive oil, divided
  • 1 cup marinara sauce
  • 4 oz mozzarella cheese, sliced or shredded
  • 2 tbsp fresh chopped basil

Directions

  1. Lay chicken breasts on a cutting board. Place one hand flat on top of one breast and use a sharp knife to slice into one side of breast, starting at thicker end and ending at thin end, cutting breast in half. Repeat with remaining chicken breast and set aside.
  2. To a shallow bowl, add egg. In another shallow bowl, combine Parmesan and Italian seasoning. Dip each chicken piece into beaten egg, shake off excess and dip into Parmesan mixture, coating both sides. Shake off excess and transfer to a plate. (TIP: After dredging, press chicken breast between two sheets of parchment paper to help Parmesan mixture stick better.)
  3. Preheat oven to 400°F. In a large nonstick skillet on medium-high, heat two-thirds of oil. Working in two batches, sear chicken for 3 to 5 minutes on the first side, flip and continue to cook for another 2 to 3 minutes, until no longer pink inside.
  4. Return all chicken to skillet and top each breast with an equal amount of marinara sauce and mozzarella on top. Drizzle remaining one-third of oil over cheese and transfer skillet to oven. Bake for 8 to 10 minutes, until cheese is melted and bubbly. Garnish with basil.

Loaded Cauliflower Mash

SERVES 6.

Ingredients

  • 3 slices bacon (no added nitrates or nitrites)
  • 1 large head cauliflower, cored and broken into florets
  • 2 tbsp heavy cream
  • 1 tbsp organic unsalted butter sea salt, to taste
  • ⅔ cup shredded cheddar cheese
  • 1 tbsp chopped fresh chives

Directions

  1. Preheat oven to 425°F. Place bacon slices on a baking sheet lined with foil. Bake for 15 minutes, until crisp. Transfer bacon to a paper-towel-lined plate. Reserve bacon fat and set aside.
  2. Turn the oven to broil on high.
  3. Bring a large pot of water to a boil. Add cauliflower and cook for 12 to 15 minutes, until fork-tender. Drain, let sit for a few minutes, then pat dry to get most of the liquid out.
  4. Transfer cauliflower to a food processor along with cream and butter. Pulse mixture until medium-smooth, the consistency of mashed potatoes. Season with salt.
  5. Transfer cauliflower mixture to a small casserole dish, an 8-inch skillet or ramekins. Sprinkle cheese on top and drizzle with reserved bacon fat. Broil for 5 minutes or until cheese is melted and bubbly. Crumble bacon on top and garnish with chives.

Roasted Salmon with Smoky Chickpeas & Greens



Ingredients

  • 2 tablespoons extra-virgin olive oil, divided
  • 1 tablespoon smoked paprika
  • ½ teaspoon salt, divided, plus a pinch
  • 1 (15 ounce) can no-salt-added chickpeas, rinsed
  • ⅓ cup buttermilk
  • ¼ cup mayonnaise
  • ¼ cup chopped fresh chives and/or dill, plus more for garnish
  • ½ teaspoon ground pepper, divided
  • ¼ teaspoon garlic powder
  • 10 cups chopped kale
  • ¼ cup water
  • 1 ¼ pounds wild salmon, cut into 4 portions

Directions

  1. Position racks in upper third and middle of oven; preheat to 425 degrees F.
  2. Combine 1 tablespoon oil, paprika and 1/4 teaspoon salt in a medium bowl. Very thoroughly pat chickpeas dry, then toss with the paprika mixture. Spread on a rimmed baking sheet. Bake the chickpeas on the upper rack, stirring twice, for 30 minutes.
  3. Meanwhile, puree buttermilk, mayonnaise, herbs, 1/4 teaspoon pepper and garlic powder in a blender until smooth. Set aside.
  4. Heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add kale and cook, stirring occasionally, for 2 minutes. Add water and continue cooking until the kale is tender, about 5 minutes more. Remove from heat and stir in a pinch of salt.
  5. Remove the chickpeas from the oven and push them to one side of the pan. Place salmon on the other side and season with the remaining 1/4 teaspoon each salt and pepper. Bake until the salmon is just cooked through, 5 to 8 minutes.
  6. Drizzle the reserved dressing on the salmon, garnish with more herbs, if desired, and serve with the kale and chickpeas.

Chicken Cutlets with Sun-Dried Tomato Cream Sauce

 



Ingredients

  • 1 pound chicken cutlets
  • ¼ teaspoon salt, divided
  • ¼ teaspoon ground pepper, divided
  • ½ cup slivered oil-packed sun-dried tomatoes, plus 1 tablespoon oil from the jar
  • ½ cup finely chopped shallots
  • ½ cup dry white wine
  • ½ cup heavy cream
  • 2 tablespoons chopped fresh parsley

Directions

  1. Sprinkle chicken with 1/8 teaspoon each salt and pepper. Heat sun-dried tomato oil in a large skillet over medium heat. 
  2. Add the chicken and cook, turning once, until browned and an instant-read thermometer inserted into the thickest part registers 165 degrees F, about 6 minutes total. 
  3. Transfer to a plate.
  4. Add sun-dried tomatoes and shallots to the pan. 
  5. Cook, stirring, for 1 minute. Increase heat to high and add wine. 
  6. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. 
  7. Reduce heat to medium and stir in cream, any accumulated juices from the chicken and the remaining 1/8 teaspoon each salt and pepper; simmer for 2 minutes. 
  8. Return the chicken to the pan and turn to coat with the sauce.

INGREDIENTS

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 1 cup creamy Caesar dressing
  • 2 ounces Parmesan cheese, finely grated (about 1/2 cup)
  • 2 tablespoons coarsely chopped fresh parsley leaves (optional)

INSTRUCTIONS

  1. Arrange a rack in the middle of the oven and heat the oven to 400ºF.
  2. Pound 4 boneless, skinless chicken breasts one at a time: Place 1 chicken breast in a gallon-sized zip-top bag and pound with a rolling pin or the flat side of a meat mallet to an even 1/2-inch thickness. Set aside and repeat with the remaining breasts.
  3. Pour 1 cup creamy Caesar dressing in a baking dish large enough to fit the chicken in a single layer. Place the chicken breasts in the baking dish, then flip them so that they are evenly coated with dressing.
  4. Bake until the chicken is golden-brown, cooked through, and registers 165°F on an instant-read thermometer, 20 to 25 minutes. Meanwhile, finely grate 2 ounces Parmesan cheese (about 1/2 cup) and coarsely chop enough parsley leaves to get 2 tablespoons, if using.

DIRECTIONS

  1. Preheat oven to 375° and line two baking sheets with parchment paper. In a medium skillet over medium heat, heat oil. Add onion and cook until slightly soft, 3 minutes. Add garlic and spices and cook until fragrant, 1 to 2 minutes more. Add chicken and enchilada sauce, then bring mixture to a simmer. Stir in cilantro, season with salt, and remove from heat.
  2. Make taquito shells: In a medium bowl, mix together cheeses. Divide mixture into twelve 3 ½" piles on prepared baking sheet. Bake until cheese is melty and slightly golden around the edges, about 10 minutes. Let cool 2 to 4 minutes, then peel shells off parchment. Add a small pile of chicken to each and roll tightly. Repeat until all taquitos are made.
  3. Garnish with cilantro and serve with sour cream, for dipping.

Grandma’s Meat Sauce Pasta with Burrata

 









Ingredients:

  • 1 tbsp olive oil 
  • 1 large onion, finely minced
  • 1/4 cup finely chopped green bell pepper
  • 4 cloves garlic, finely minced
  • 1 lb lean ground beef
  • 1 1/2 tsp salt
  • 2 tsp fresh black pepper 
  • 1 tbsp dried herbs (oregano, basil, rosemary)
  • 1 tbsp tomato paste
  • 4 cups crushed tomatoes (2 x 14.5 Oz cans OR 1 28 Oz)
  • 1 tbsp sugar
  • 2-3 whole cloves 
  • 2 cups water or stock of your choice
  • 1 package cooked pasta of your choice, plus 1/2 cup of the reserved pasta water
  • To serve: Fresh parsley, burrata, cracked black pepper and a drizzle of olive oil


Directions:

  1. Sauté onions, green pepper and garlic using the olive oil in a large heavy-bottomed pot until the onions are translucent (10 minutes). Add ground beef and brown, 5 minutes on medium heat. Add the salt, pepper, herbs and tomato paste. Continue to cook while stirring, 10 minutes.
  2. Add the crushed tomatoes, cloves, sugar and water or stock - Turn heat to low and simmer for 45 minutes to 1 hour, stirring halfway through. The sauce should reduce somewhat and become darker in color. Remove cloves.
  3. Add the cooked pasta to the sauce and mix through very gently with the heat on the lowest setting. My grandmother would add some of the pasta water to thin it out just a bit, then allow it to cook for 5 minutes more and add an optional tbsp of butter to make the sauce glisten. The best part for us was that the pasta was tender having soaked up all the sauce.
  4. Plate and top with pieces of burrata, fresh pepper, olive oil and fresh parsley.

Rosemary Olive No-Knead Bread

 Rosemary Olive No-Knead Bread

INGREDIENTS

  • 3 cups all-purpose flour, plus more for shaping
  • 1 teaspoon kosher salt
  • 3/4 teaspoon active dry yeast
  • 1 cup Kalamata olives
  • 1/2 cup Calvestrano olives
  • 1 1/2 cups warm water
  • 1 large shallot
  • 1 tablespoon finely chopped fresh rosemary leaves

INSTRUCTIONS

  1. Place 3 cups all-purpose flour, 1 teaspoon kosher salt, and 3/4 teaspoon active dry yeast into a large bowl and whisk to combine. Make a well in the flour mixture.
  2. Pit and halve 1 cup Kalamata olives and 1/2 cup Calvestrano olives, and place both in the well. Pour 1 1/2 cups warm water into the well and stir until a rough, shaggy dough forms. Cover the bowl and let the dough rise in a warm place until doubled in bulk and bubbly, 6 to 8 hours.
  3. Finely chop 1 large shallot. Chop until you have 1 tablespoon finely chopped fresh rosemary leaves. Lightly flour a piece of parchment paper and turn the dough out onto it. Sprinkle the dough with the shallot and rosemary. Fold the dough over onto itself 4 times to incorporate the add ins. Flip the dough over and quickly shape into a round ball. Cover with a towel and let rise until nearly doubled in size, 1 to 1 1/2 hours.
  4. About 30 minutes before the dough is ready, arrange a rack in the middle of the oven and remove any racks above it. Place a large Dutch oven and its lid on the rack and heat the oven to 450°F.
  5. Remove the Dutch oven from the oven. Use the parchment paper as a sling and carefully transfer the loaf, still on the parchment, into the Dutch oven. If desired, slash or cut the top of the dough with kitchen shears or a sharp knife.
  6. Cover the Dutch oven, place it back in the oven, and bake for 30 minutes. Uncover and bake until the top is browned, about 15 minutes more. Another way to know that the bread is ready is if an instant-read thermometer inserted into the top or side registers 210°F. Remove the Dutch oven from the oven and use the parchment paper to transfer the bread to a wire rack. Cool at least 15 minutes before slicing the bread.

Sausage Potato and Kale Soup

 








Ingredients:

  • 1lb smoked beef sausage or kielbasa, sliced 
  • 1 medium yellow onion, finely diced
  • 4-6 cloves minced fresh garlic
  • 1 heaped teaspoon sweet smoked paprika
  • 4 medium potatoes, cubed (or 4-6 cups cauliflower florets for those watching carbs)
  • 32 ounces no sodium chicken bone broth (I buy these in bulk to always have on hand)
  • 2 tablespoons heavy whipping cream or half & half
  • 4 cups roughly chopped tuscan or curly kale
  • lots of fresh ground black pepper to taste


Method:

  1. Bring a large heavy bottomed saucepan to medium heat. Add the sliced sausage directly without any oil, it’ll render its own oil. Sauté for 2-3 minutes until golden then add onion and garlic, stirring and cooking for 5 minutes until onions are translucent and garlic fragrant.
  2. Add 1 heaped teaspoon smoked paprika, potatoes and bone broth. Place the lid on and cook for 15-20 minutes until the potatoes are cooked through and soft enough to mash a few with the back of a fork. This will thicken the soup up a bit, so have some more stock ready if you feel it’s not soupy enough. 
  3. Add the kale and heavy cream, lower heat and simmer for 2-3 minutes until kale is wilted. Divide amongst your family and serve with some fresh black pepper tableside.

Shrimp and Linguine Fra Diavolo

This recipe is adapted from a dish in Ina Garten's cookbook "Modern Comfort." She recommends using a jarred arrabbiata sauce - Garten likes Rao's brand - to get it on the table more quickly. If you prefer to make your own, see the related recipe, or spice up your own tomato sauce for this dish with lots of garlic, fennel seeds, red pepper flakes and red wine.

Storage Notes: Leftovers can be refrigerated for up to 3 days.

INGREDIENTS

  • 3 tablespoons unsalted butter, divided
  • 1/3 cup panko
  • 8 tablespoons chopped fresh parsley leaves, divided
  • 1 1/2 teaspoons freshly ground black pepper, divided, plus more to taste
  • 1 1/4 pounds large shrimp (16-to-20-count), peeled and deveined
  • 2 tablespoons extra-virgin olive oil
  • 2 cups thinly sliced red onion (about 1 large, 10 ounces)
  • 3 tablespoons minced or grated garlic (about 6 cloves)
  • 1/2 teaspoon crushed red pepper flakes, plus more to taste
  • 2/3 cup dry white wine, such as pinot grigio
  • 1 (24-ounce) jar arrabbiata sauce or other spicy pasta sauce
  • Kosher salt
  • 1 pound linguine

DIRECTIONS

  1. In a large, heavy-bottomed pot, such as a Dutch oven, over medium heat, melt 1 tablespoon of the butter. Add the panko and cook until lightly browned, about 2 minutes, stirring occasionally. Transfer to a small bowl and stir in 2 tablespoons of the parsley and 1/2 teaspoon of the black pepper.
  2. On a large plate, spread out the shrimp, pat them dry and sprinkle with the remaining black pepper.
  3. In the same large pot over medium heat, add the remaining butter and the olive oil. Add the onion and cook, stirring until it begins to soften, about 4 minutes. Add the garlic and red pepper flakes and cook, stirring, until aromatic, about 1 minute. Add the shrimp in as close to a single layer as possible, and cook until they just start to turn pink but are not cooked through, about 1 minute on each side. Add the wine and simmer until the liquid reduces a bit, about 2 minutes.
  4. Stir in the arrabbiata sauce and heat until it bubbles around the edges. Stir in the remaining 6 tablespoons parsley. Taste and add more pepper as needed. Turn off the heat.
  5. In a large pot of salted boiling water over medium-high heat, add the linguine and cook according to package instructions for al dente. Reserve 1 1/2 cups pasta water and drain.
  6. Add 1/4 cup pasta water to the shrimp mixture and stir to combine. If it seems too thick, add more pasta water a tablespoon at a time. Then, add the pasta and, using big spoons or tongs, toss it with the shrimp. Let sit until the pasta absorbs some of the sauce, about 1 minute, adding more pasta water and re-tossing, if needed to coat the strands.
  7. Transfer to a large, shallow serving bowl, sprinkle with the toasted panko and serve.

Ina Garten's Arrabbiata Sauce

Ina Garten included this recipe, which she based on sauce served by chef Missy Robbins of the restaurants Lilia and Misi in Brooklyn, in her cookbook, "Modern Comfort." She notes that "it has a stunning amount of garlic in it, but don't worry; the flavor mellows as it cooks." Use it to make her Shrimp and Linguine Fra Diavolo (see related recipe).

INGREDIENTS

  • 1/4 cup extra-virgin olive oil
  • 1 cup whole, peeled garlic cloves (2 to 3 heads)
  • 2 (28-ounce) cans whole peeled Italian plum tomatoes, preferably San Marzano, drained
  • 2 teaspoons whole fennel seeds, chopped
  • 1 teaspoon crushed red pepper flakes, plus more as needed
  • 1/3 cup dry Italian red wine, such as chianti
  • 1 teaspoon ground black pepper, plus more as needed
  • 1/2 teaspoon kosher salt, plus more as needed
  • 1/4 cup julienned fresh basil leaves, for serving (optional)

DIRECTIONS

  1. In a medium pot or Dutch oven with a lid, warm the olive oil over medium-low heat. Add the garlic and cook, tossing occasionally, until the garlic has softened and is lightly browned, about 8 minutes. Watch the garlic closely so that it doesn't burn, raising and lowering the heat as needed.
  2. Meanwhile, place the tomatoes in a food processor and pulse until roughly chopped, about 30 seconds. Using a slotted spoon, transfer the garlic to the food processor and pulse three or four times to chop the garlic.
  3. Pour the tomato mixture into the pot with the oil; add the fennel seeds, red pepper flakes, wine, black pepper and salt. Raise the heat to medium-high and bring to a boil. Decrease the heat to low, cover, and simmer until thickened and a bit darkened, about 30 minutes.
  4. Remove from the heat and stir in the basil, if using. Taste, and season with more salt and/or pepper, as needed.

Coconut-Lime Chicken Curry

 









  • Total time: 30 minutes
  • 4 servings

  • INGREDIENTS
  •  4 teaspoons vegetable oil , divided
  •  450 g Boneless skinless chicken breast , cut in bite-size pieces
  •  1/2 lb green bean , trimmed and halved
  •  1 small red onion , quartered
  •  1 sweet red pepper , cut in thin strips
  •  1 tablespoon grated fresh ginger
  •  2 cloves garlic , minced
  •  2 teaspoons curry powder
  •  1/2 teaspoon ground turmeric
  •  1 400 ml can coconut milk
  •  2 tablespoons lime juice
  •  1/4 cup chopped fresh cilantro (optional)

METHOD

  1. In large deep skillet, heat 2 tsp of the oil over medium-high heat; cook chicken, stirring occasionally, until golden on all sides, 4 to 5 minutes. Using slotted spoon, transfer to plate.
  2. In same skillet, heat remaining oil over medium heat; cook green beans, onion and red pepper until onion is softened, about 5 minutes. Add ginger, garlic, curry powder and turmeric; cook for 1 minute, stirring.
  3. Return chicken to skillet; add coconut milk and lime juice. Bring to boil; reduce heat and simmer until vegetables are tender and chicken is cooked through, about 5 minutes. Sprinkle cilantro over top, if using.

One-Pan Coconut Chicken Curry and Rice

Ingredients 

  • 2 tablespoons olive oil 
  • 1/2 cup white onion, diced finely 
  • 1 red chile pepper, diced (can sub 1/2 teaspoon red pepper flakes for this or a jalapeno) 
  • 1 lb boneless skinless chicken breast, diced into 1-inch pieces 
  • cloves garlic, minced 
  • 1 tablespoon olive oil 
  • 2 teaspoons curry powder 
  • 1 cup uncooked long grain white rice 
  • 1 cup chicken broth (I like to use Better than Buillion paste with water) 
  • 1 (14.5 ounce) can coconut milk (I like Thai kitchen) 
  • 1 teaspoon salt 
  • 1 teaspoon minced ginger 
  • 2 tablespoons chopped basil leaves 

Instructions 

  1. 1. In a large skillet, heat oil over medium high heat. Add the onion and peppers and sautee for a couple of minutes. 
  2. Add the chicken and sautee for 5-6 minutes or until no longer pink. Add more oil if needed while cooking. 
  3. Add the garlic and sautee for the last minute of cooking. Push mixture to the side of the pan. 
  4. Add the remaining tablespoon of olive oil, Add the curry powder, coriander, and rice. Sautee for 30 seconds. This helps the spices bloom. 
  5. Quickly add the chicken broth, coconut milk, and salt. 
  6. Simmer covered over low heat for 15-20 minutes or until rice is tender. 
  7. Stir in the ginger for the last couple minutes. 
  8. When rice is tender, stir in basil and serve. 


Roasted Brussels Sprouts with Garlic, Red Pepper Flakes, and Parmesan

 









INGREDIENTS

  • 2 ¼ pounds brussels sprouts, trimmed and halved
  • 6 tablespoons olive oil
  • 1 tablespoon water
  • Salt and pepper
  • 2 garlic cloves, minced
  • ½ teaspoon red pepper flakes
  • ¼ cup grated Parmesan cheese
BEFORE YOU BEGIN

  • If you are buying loose Brussels sprouts, select those that are about 1½ inches long. Quarter Brussels sprouts longer than 2½ inches; don’t cut sprouts shorter than 1 inch.
INSTRUCTIONS
  1. Adjust oven rack to upper-middle position and heat oven to 500 degrees. Toss Brussels sprouts, 3 tablespoons oil, water, ¾ teaspoon salt, and ¼ teaspoon pepper in large bowl until sprouts are coated. Transfer sprouts to rimmed baking sheet and arrange so cut sides are facing down. Cover sheet tightly with aluminum foil and roast for 10 minutes.
  2. Heat remaining 3 tablespoons of oil in 8-inch skillet over medium heat until shimmering. Add garlic and red pepper flakes; cook until garlic is golden and fragrant, about 1 minute. Remove from heat.
  3. Remove foil and continue to cook until Brussels sprouts are well browned and tender, 10 to 12 minutes. Transfer to serving platter, toss with garlic oil, and season with salt and pepper to taste. Sprinkle with Parmesan and serve

Harissa Olive Oil-Braised Chickpeas and Fennel

 



  • YIELD Serves 4 to 6
  • PREP TIME 5 minutes to 10 minutes

INGREDIENTS

  • 1 medium fennel bulb with fronds
  • 4 cloves garlic
  • 1 medium lemon
  • 2 (about 15-ounce) cans chickpeas
  • 1 cup olive oil
  • 1 1/2 tablespoons harissa paste or sauce (such as NYShuk), plus more as needed
  • 1/2 teaspoon kosher salt
  • 3 sprigs fresh rosemary
  • 4 ounces feta cheese
  • Crusty bread or cooked couscous, for serving (optional)

INSTRUCTIONS

  1. Arrange a rack in the middle of the oven and heat the oven to 325°F.
  2. Coarsely chop 2 tablespoons fennel fronds and reserve. Trim the top and bottom of 1 medium fennel bulb. Quarter, core, and thinly slice. Smash 4 garlic cloves. Halve 1 medium lemon. Thinly slice half the lemon and remove the seeds from the slices; reserve the remaining half. Drain and rinse 2 cans chickpeas.
  3. Pour 1 cup olive oil into a 9x13-inch or other 3-quart baking dish. Add 1 1/2 tablespoons harissa paste and 1/2 teaspoon kosher salt; stir to combine. Add the chickpeas, fennel, garlic, lemon slices, and 3 fresh rosemary sprigs. Toss gently to coat everything in the harissa olive oil and arrange into an even layer.
  4. Cover tightly with aluminum foil. Bake, stirring halfway through, until the chickpeas are soft but not falling apart, and the mixture is bubbling, about 1 hour total.
  5. Uncover and squeeze the juice from the reserved lemon half over the chickpeas and stir to combine. Let cool for 5 minutes. Taste and if you like things spicier, stir in a bit more harissa as desired. Crumble 4 ounces feta cheese over the top, sprinkle with reserved fennel fronds, and serve with crusty bread or over cooked couscous, if desired.

Easy Lemon Rosemary Chicken

Ingredients

  •  4 boneless, skinless chicken breasts ( 1 1/4 pounds total)

  •  1 ¼ teaspoon lemon pepper seasoning
  •  3 tablespoons EACH: butter AND lemon juice
  •  5 cloves garlic minced
  •  ⅓ cup chicken broth
  •  1 ¼ teaspoon EACH: freshly chopped rosemary AND parsley
  •  ¼ teaspoon red pepper flakes (more/less to taste)
  •  2 teaspoons honey (or maple syrup)
  •  additional lemon slices, for garnish

Instructions

  1. PREP: Position a rack in the center of the oven and preheat the oven to 425ºF. 
  2. SAUCE: In a 1-cup measuring cup, combine 2 tablespoons of butter, lemon juice, minced garlic, chicken broth, freshly chopped rosemary, parsley, red pepper, and honey and microwave in 30-second increments until the butter melts. Keep a close eye on it so it doesn’t boil over!
  3. CHICKEN: Season the chicken breasts with lemon pepper seasoning on both sides and a big pinch of salt. Add the remaining tablespoon of butter to an ovenproof skillet placed over medium-high heat and when it's hot, sear the chicken breasts. Do not overcrowd the pan or your chicken won’t brown. You may want to do this in two batches. Cook the chicken for 2-3 minutes per side. If you don’t have an ovenproof skillet, transfer the chicken to a 9x13 baking dish sprayed with cooking spray. 
  4. BAKE: Pour the prepared sauce over the chicken. Bake for 13-17 minutes or until the internal temperature of the chicken reaches 165ºF. Feel for firmness on the thickest part of the breast if you don’t have a thermometer. Spoon the sauce over the chicken breasts a couple of times during the baking process to keep the chicken moist! The amount of time required for the chicken to bake just depends on the thickness.

Notes

The lemon slices that you see in the pictures aren’t really a part of the recipe. I just sliced fresh lemon and heated it in a warm pan and used it for pictures. If you’d like to do the same, feel free to do this in the skillet before searing the chicken breasts to make it easier for cleanup!

Garlic Butter Tomato Baked Chicken with Mozzarella

Ingredients

Chicken Marinade:

  • 1 tablespoons EACH: olive oil and white wine vinegar
  • 3 cloves minced garlic
  •  ¼ - ½ teaspoon red pepper flakes
  •  ½ teaspoon Italian seasoning
  •  4 boneless skinless chicken breasts
Balsamic Tomato Pan Sauce:
  •  3 cups cherry tomatoes, halved
  •  2 tablespoons EACH: balsamic vinegar and melted butter
  •  1 tablespoon honey
  •  4 cloves minced garlic
  •  2 tablespoons chopped basil
  •  ½ teaspoon EACH: onion powder and dried thyme
  •  1½ cups shredded mozzarella cheese

Instructions

  1. Marinate: Add all the ingredients except the chicken breasts into a zip top bag along with 1 teaspoon of salt and ½ teaspoon black pepper. Seal the bag and shake until mixed. Add the chicken breasts, seal, and massage so the chicken is covered in the marinade, set aside for 10-15 minutes while you prep the remaining ingredients. Position a rack in the center of the oven and preheat the oven to 425ºF.
  2. Balsamic Tomato Pan Sauce: Add all the ingredients except the mozzarella to an oven-safe baking dish, along with a big pinch of salt and pepper, and stir to combine. Move the tomatoes around the edges and place the chicken breasts in the center.
  3. Bake: Bake uncovered for 18-22 minutes or until the chicken is almost cooked through. Add the mozzarella cheese to the chicken breasts and broil just long enough for the cheese to melt. Top with additional chopped basil or parsley and serve warm with crusty bread, pasta, rice, or steamed veggies!

Notes

Extra points for being lazy: you can melt the butter right in your baking dish before adding the remaining ingredients (as long as it is microwave safe!)

I suggest shredding your own mozzarella for this recipe. Pre-shredded mozzarella didn't yield such great results for me, unfortunately!

You can marinate the chicken for up to 4 hours! Feel free to do this earlier in the day if you'd like.

Lemon Pepper Chicken

INGREDIENTS

  • 3 tablespoons unsalted butter, plus more for coating the pan
  • 1 tablespoon salt-free lemon pepper seasoning blend
  • 1 teaspoon kosher salt
  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 1 small lemon
  • 2 tablespoons coarsely chopped fresh parsley leaves

INSTRUCTIONS

  1. Arrange a rack in the middle of the oven and heat the oven to 425°F. Lightly coat a baking dish large enough to fit the chicken in a single layer with some room around each one with butter.
  2. Melt 3 tablespoons unsalted butter in a small saucepan over medium-low heat or in a small bowl in the microwave. Add 1 tablespoon salt-free Lemon Pepper seasoning and 1 teaspoon kosher salt and stir until combined.
  3. Pat 4 boneless, skinless chicken breasts dry with paper towels. Place the chicken in the prepared baking dish, spaced slightly apart. Brush the chicken all over with all of the butter mixture.
  4. Thinly slice 1 lemon and scatter the slices around the chicken. Bake until the chicken is golden-brown, cooked through, and registers 165°F on an instant-read thermometer, 25 to 35 minutes. Meanwhile, coarsely chop enough parsley leaves to get 2 tablespoons. Serve the chicken garnished with the parsley.

INGREDIENTS

The Pesto

  • 1 large bunch fresh basil
  • 1 cup pine nuts
  • 1 cup grated Parmesan cheese
  • salt
  • olive oil


The Chicken

  • 4 boneless, skinless chicken breasts
  • 8 slices prosciutto


DIRECTIONS

The Pesto

  1. Puree the basil, pine nuts, cheese and olive oil in a food processor.
  2. Season to taste with salt.

The Chicken

  1. Preheat oven to 375°F.
  2. Lay 2 slices of the prosciutto flat onto a work surface, overlapping them slightly along their long edge, to form a large rectangle.
  3. Place a chicken breast lengthwise at the short end and slit it open along one side to create a wide pocket. Spoon in some of the pesto and then wrap the prosciutto neatly around it. Repeat for the other 3 breasts.
  4. Place on a baking sheet, seam side down and bake until golden and cooked through, about 15 minutes.

Pizza Stuffed Chicken

  • 4 chicken breasts, about 6 ounces each
  • 2 teaspoons avocado oil
  • 1 teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • 2 cups grated mozzarella, divided
  • ¼ cup Parmesan cheese
  • 32 slices pepperoni
  • 1 cup pizza sauce
  • 1 teaspoon minced parsley

Instructions

  1. Preheat oven to 375 degrees. Spray a 9x13 baking dish with non-stick spray.
  2. Place the chicken breasts on a cutting board. Use a sharp knife to cut a pocket into the side of each chicken breast.
  3. Drizzle both sides of the chicken with oil and season with the garlic powder, Italian seasoning and salt.
  4. Place 1/4 cup of mozzarella in the pocket of each chicken breast. Add 4 slices of pepperoni over the cheese.
  5. Place the chicken in the prepared baking dish and drizzle with the pizza sauce. Spread the sauce out to cover the tops of the chicken.
  6. Sprinkle with the remaining mozzarella. Top with the Parmesan and remaining pepperoni slices.
  7. Bake, uncovered, for 30-35 minutes or until the chicken is cooked through.
  8. Sprinkle with fresh parsley before serving.

Spinach Stuffed Chicken Breasts

  • 1 tesapoon paprika
  • 1 teaspoon salt, divided

  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic, minced
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat oven to 375 degrees.
  2. Place the chicken breasts on a cutting board and drizzle with oil.
  3. Add the paprika, 1/2 teaspoon salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken. 
  4. Use a sharp knife to cut a pocket into the side of each chicken breast. Set chicken aside.
  5. Add cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine.
  6. Spoon the spinach mixture into each chicken breast evenly.

Cocktail - Paris Between the Wars

This cocktail was created by our former bar chef Abigail Gullo,” report Ti Martin and Lally Brennan of Commander’s Palace in New Orleans. “It’s been a holiday favorite of ours for years ever since, as it just puts us in a good mood.” Smokiness from the blended Scotch, rounded bitterness from Campari, and a tart kiss of lemon make for a well-balanced and refreshing drink.


IngredientsIngredient Checklist

  • 1 1/2 tablespoons (3/4 ounce) Campari
  • 1 1/2 tablespoons (3/4 ounce) blended Scotch whisky (such as Dewar’s)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon simple syrup
  • 1/2 cup ice cubes
  • 2 tablespoons (1 ounce) dry sparkling wine, such as brut Cava
  • Lemon peel strip, for garnish

Directions

Step 1

Combine Campari, Scotch, lemon juice, simple syrup, and ice in a cocktail shaker. Cover and shake vigorously until well chilled; strain into a cocktail glass. Top with sparkling wine, and garnish with lemon peel strip.

Creamed Spinach–Stuffed Salmon

 


INGREDIENTS

  • 4 teaspoons extra virgin olive oil divided
  • 5 ounces fresh baby spinach about 5 cups
  • 1 clove garlic minced (about 1 teaspoon)
  • ¾ teaspoon kosher salt divided
  • 1/2 teaspoon black pepper divided
  • Pinch red pepper flakes
  • ¼ cup reduced-fat cream cheese
  • 1/4 cup shredded part-skim mozzarella cheese
  • ¼ cup finely grated Parmesan
  • 4 6 ounce salmon fillets skin off or on

DIRECTIONS

  1. Season salmon all over with salt and pepper. In a large bowl, mix together cream cheese, mozzarella, spinach, garlic powder, and red pepper flakes. 
  2. Using a paring knife, slice a slit in each salmon to create a pocket. Stuff pockets with cream cheese mixture. 
  3. In a large skillet over medium heat, heat oil. Add salmon skin side down and cook until seared, about 6 minutes, then flip salmon. Add butter and squeeze lemon juice all over. Cook until skin is crispy, another 6 minutes. Serve warm.

Oven Version

  1. Place a rack in the center of your oven and preheat oven to 425 degrees F. For easy clean up, line a large rimmed baking sheet with parchment paper.

  2. Heat 2 teaspoons of the oil in a medium non-stick skillet over medium-high heat. Add a big handful of spinach and cook, stirring often, until it begins to wilt. Stir in the garlic, ¼ teaspoon salt, 1/4 teaspoon black pepper, and red pepper flakes and let cook 30 seconds. Continue adding the remaining spinach by large handfuls, until it completely wilts down. Remove the pan from the heat.
  3. Stir in the cream cheese until it melts and smoothly combines with the spinach. Stir in the mozzarella cheese and Parmesan, until the cheeses melt and the mixture looks like a delicious spinach and dip.
  4. Place salmon fillets on a clean work surface. With a small, sharp knife, make a cut lengthwise down the middle of each fillet to create a pocket (do not cut the fish all the way through). Transfer the salmon to the prepared baking sheet. Sprinkle evenly with the remaining ½ teaspoon salt. With a small spoon, fill each fillet with a quarter of the spinach mixture.
  5. Drizzle the remaining 2 teaspoons olive oil over the fillets and brush with a pastry brush or lightly rub with your fingers to coat. Sprinkle with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place the sheet pan in the oven and bake until the salmon is opaque in the center and flakes easily with a fork, 8 to 10 minutes.

A Merry Couple

 



A MERRY COUPLE
Bourbon and Madeira syrup make a sweet match in this cocktail.

It’s no surprise that this whiskey sour riff, sourced from Kentucky, features Bourbon. The twist is a “wine syrup,” made from Madeira and sugar, which adds complexity and dried-fruit richness. A half-ounce of Angostura bitters also contributes holiday-appropriate spice.

  • 1½ ounces Bourbon
  • 1 ounce lemon juice
  • 1 ounce Madeira wine syrup (recipe follows)
  • ½ ounce Angostura bitters
  • 1 thin strip lemon peel, for garnish

  1. Combine all ingredients in cocktail shaker filled with ice. Shake well, then strain into coupe glass. Garnish with lemon peel.

MADEIRA SYRUP

  1. Combine 1 cup dry-style Madeira (like Sercial) and 1 cup sugar in saucepan over medium heat. 
  2. Stir until sugar dissolves. 
  3. Remove from heat, and let cool before use. 
  4. Refrigerated in lidded container, it will keep for up to 2 weeks. 
  5. Makes about 2 cups.

Pistachio Gelato

Pistachio Gelato

INGREDIENTS

  • 2 cups 2% milk
  • 1 cup heavy whipping cream
  • 4 egg yolks
  • 1/2 cup sugar
  • 1/3 cup pistachio nut paste

INSTRUCTIONS

  1. Heat the milk and heavy whipping cream in a saucepan over medium-high heat until it begins to simmer and foam.
  2. Meanwhile, in a mixing bowl, whisk together the egg yolks and sugar using a whisk or hand mixer. Continue whisking/mixing until the mixture is smooth and ribbon-like.
  3. Once the milk begins to simmer, remove it from the heat. Slowly pour half of it into the egg mixture while whisking rapidly. Working quickly, transfer the egg mixture into the saucepan, pouring in a slow stream and whisking rapidly until everything is combined. It is important to work quickly here so that the egg doesn't cook and create little chunks of cooked egg.
  4. Heat over medium heat and whisk in the pistachio nut paste. Continue heating until the mixture starts to thicken.
  5. Remove from heat and pour the mixture into a sturdy, freezer-safe pan, like a bread pan. Place in freezer for 30 minutes.
  6. Because we are doing this by hand rather than an ice cream maker, it is important to churn the gelato by hand as it freezes in order to break up the ice crystals and create a smooth texture. Whisk (or use a hand mixer) on the gelato every 30-45 minutes until it reaches the texture of frozen yogurt, then simply leave it in the freezer until ready to eat. This should take 3 to 4 hours, or about 6 "churnings."
  7. Let sit for 5-10 minutes on the counter to soften before serving. Sprinkle pistachio nuts over the gelato if desired.


Paste

For the Pistachio Paste

  • 1½ cups [375 ml] shelled unsalted pistachio nuts
  • 2/3 cup [160 ml] granulated sugar

METHOD

  1. To make the pistachio paste: Bring a small pot of water to a boil. Add the shelled pistachio nuts and simmer for two minutes. This is going to blanch the nuts and make them easier to peel and grind later on. After two minutes, drain and rinse the nuts under cold water to cool them completely.
  2. Dry the nuts with paper towels. If the nuts still have their skin on, you need to peel them because using the nuts with the skin on will change both the color and texture of the gelato. To peel a pistachio, simply pinch it between your fingers: the skin should come right off. This steps take a bit of work, but it's worth it. Alternatively, you can look for peeled pistachios, which are going to save you the extra step (it is still necessary to blanch peeled pistachios).
  3. Put the blanched and peeled nuts in the bowl of a food processor, then add the sugar. Pulse until the nuts are finely ground, stopping from time to time to scrape down the bowl.
  4. Add the whole milk and process until the mixture is as smooth and creamy as the food processor will make it (some tiny pistachio bits will remain but that’s ok). If you want an even smoother texture, transfer the pistachio paste to a mixing bowl and puree it further using a stick blender.
  5. To make the pistachio gelato: Whisk the pistachio base into a batch of Sicilian-Style or Classic Gelato Base. If desired, whisk a teaspoon [5 ml] of pistachio or almond extract. Pour into the bowl of an ice cream maker. Freeze according to the manufacturer’s instructions. Stop the machine when the gelato is icy but still soft.
  6. Transfer the gelato to an airtight container and freeze until firm, about two hours. The gelato will keep, frozen, for up to two weeks. Always take the gelato out to room temperature 10 to 15 minutes before serving to soften it and make it easier to scoop.

Slow Cooker Chicken Curry with Potatoes and Cauliflower

 

Ingredients

  • 2 3/4 pounds skinless, boneless chicken thighs
  • Kosher salt and freshly ground pepper
  • 1 1/2 tablespoons canola oil
  • 3 garlic cloves, minced
  • 2 tablespoons minced fresh ginger
  • 1 onion, cut into 1/2-inch dice
  • 2 tablespoons Madras curry powder
  • 1/2 cup low-sodium chicken broth
  • 2 baking potatoes, peeled and cut into 1-inch dice
  • 1 small head of cauliflower, cut into 1 1/2-inch florets
  • One 15-ounce can unsweetened coconut milk
  • 3/4 cup frozen baby peas, thawed
  • 1/3 cup coarsely chopped cilantro

Directions

Step 1

  1. Pat the chicken dry with paper towels, then season the chicken with salt and pepper. In a large nonstick skillet, heat the oil until shimmering. 
  2. Add the chicken in batches and cook over moderately high heat until golden on both sides, about 8 minutes. 
  3. Transfer the chicken to a slow cooker.

Step 2

  1. Add the garlic, ginger and onion to the skillet and cook over moderate heat until fragrant and softened slightly, about 1 minute. 
  2. Add the curry powder and cook until fragrant, about 30 seconds. 
  3. Add the chicken broth and cook for about 1 minute, scraping up the browned bits from the bottom of the pan. 
  4. Scrape the contents of the skillet into the slow cooker. Stir in the potatoes and cauliflower and season with salt and pepper. 
  5. Cook on high for about 3 hours, until the chicken is white throughout and the vegetables are tender.

Step 3

  1. Using a slotted spoon, transfer the chicken and the vegetables to a serving bowl and keep warm. 
  2. Pour the juices into a small saucepan. 
  3. Boil the juices over moderately high heat until reduced to 1/2 cup, about 10 minutes. 
  4. Whisk in the coconut milk. 
  5. Bring to a simmer and season with salt and pepper. 
  6. Stir in the peas and cook until warmed through, about 30 seconds. 
  7. Pour the curry sauce and peas over the chicken, sprinkle with the cilantro and serve.

Spicy lentil tahini wrap

  • 1 cup dry lentils
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon olive oil
  • salt to taste

Spicy Tahini Sauce:

  • 2 Tablespoons tahini paste
  • 3 Tablespoons warm water
  • 1 tablespoon olive oil
  • 2 Tablespoons fresh lemon juice
  • 1–2 garlic cloves finely minced
  • ½ teaspoon kosher salt
  • cracked pepper
  • 1 teaspoon sriracha sauce

Wrap ingredients:


  • 1 ½ Cups shredded cabbage
  • 1 ½ Cups shredded carrots
  • 3 C chopped cilantro and scallions
  • 2 Tablespoons toasted sunflower ( or pumpkin seeds) – optional
  • 1 avocado, sliced
  • 4 x 12-inch tortillas, warmed

instructions

  1. Cook lentils in a pot of water until cooked al-dente. Drain well and season with cumin, coriander olive oil and salt to taste.
  2. While lentils are cooking, make tahini sauce. In a small bowl, using a fork or tiny whisk, mix tahini paste, warm water, olive oil, lemon juice, garlic, salt pepper, and sriracha sauce, until creamy.
  3. Prep all veggies.
  4. When ready to make wraps, heat tortillas over a gas stovetop, set to medium, flipping and turning frequently until tortillas are warm and pliable, or toast in a toaster oven. Do not over toast, or they will become tough and hard to roll.
  5. Divide lentils, cilantro, scallions, and veggies and roll up like a small burrito, Cut in half at a diagonal.

Serve with the spicy tahini sauce on the side, spooning it in as you eat.

Sous Vide Ribeye Steak with Compound Butter

Instructions

  1. Set the sous vide to your desired temperature (130-degrees for medium-rare).
  2. Sous vide in water bath. 
  3. Season ribeye steaks with salt and pepper and vacuum seal using your preferred method (1 steak per bag).
  4. Ribeye steak sealed in bag. 
  5. Cook for 1 hour (for 1 1/2-inch thick ribeye steak), up to four hours (unless you are cooking under 130-degrees).
  6. Remove ribeye steaks and pat dry with paper towels. Season with salt and pepper.
  7. Cooked sous vide steak in ziploc bag. 
  8. Add oil to a large cast iron skillet and heat over high heat. Working one steak at a time, sear steaks 1-minute per side, then using tongs, sear the sides of the ribeye as well.
  9. Ribeye being seared in skillet. 
  10. Remove to cutting board and top with compound butter. Repeat with second steak. Slice and serve.
  11. Compound butter on parchment paper sliced. 

Notes

Note that if you are cooking at below 130°F you should sous vide for no longer than 2 1/2 hours for food safety reasons.

Crispy Cacio e Pepe Recipe

 



Serves 2-4

Prep time: 10 minutes

Ingredients

  • kosher salt, to taste
  • 8 ounces/225 grams creste di gallo or other short pasta 
  • 2 tablespoons olive oil 
  • 2 tablespoons unsalted butter 
  • 1 teaspoon coarsely ground black pepper 
  • 2 ½ ounces/70 grams freshly grated parmesan cheese, plus more to serve
  • 2 ½ ounces/70 grams freshly grated Pecorino Romano cheese, plus more to serve

Directions

  1. Bring a large pot of generously salted water to a boil. 
  2. Add the pasta and cook, stirring occasionally, until just shy of al dente, 9 minutes. 
  3. Drain, reserving 1 cup of the cooking liquid.
  4. Meanwhile, heat the oil and butter in a large nonstick skillet over medium. 
  5. Add the pepper and cook until lightly toasted, about 2 minutes. 
  6. Toss in the pasta and ⅔ of each cheese. 
  7. Add ¼ cup 60m ml of the reserved pasta water until creamy, then increase the heat to medium-high. 
  8. Gently fry the pasta, stirring occasionally, until golden and crispy, about 10 minutes. 
  9. Once the pasta has achieved crispy, golden perfection, toss in the remaining cheeses and some more of the reserved pasta water until creamy. 
  10. Divide among plates and grate more of each cheese on top to serve. 


Spaghetti Pomodoro al Parmigiano Reggiano by Chef Michele Casadei Massari

Serves four people. 

Ingredients:

  • 1⁄4 cup extra virgin olive oil
  • 1 shallot 
  • 28 oz San Marzano tomatoes, puréed
  • 1⁄2 teaspoon sea salt 
  • 10 large basil leaves 
  • 12 ounces spaghetti 
  • 1/2 cup of grated Parmigiano Reggiano 
  • Extra basil and Parmigiano Reggiano for garnish 

Method:

  1. Heat the olive oil over medium heat in a large skillet. 
  2. Add the shallot and cook, stirring occasionally, until the shallot is browned and soft. 
  3. Add a half spoon of hot water and salt. (Be careful of splattering when adding the hot water.) Stir in the puréed tomatoes (pomodoro, in Italian). 
  4. Cook the sauce for approx. 15 minutes, stirring occasionally. 
  5. Once the sauce has thickened, stir in the fresh basil. 
  6. Bring a large pot of salted water to a boil, cook the pasta “al dente”, which means that the pasta should be tender but still firm to the bite. 
  7. Add the spaghetti to the pomodoro sauce in the skillet, add some extra virgin olive oil and 1 spoon of grated Parmigiano Reggiano. 
  8. Stir until the sauce coats the spaghetti, we call this “legatura” meaning the pasta bonds with the sauce.

Simple Marinara Sauce Recipe

 Ingredients

  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1 pinch crushed red pepper flakes
  • 1 28-ounce can whole San Marzano tomatoes, crushed by hand
  • 1 teaspoon kosher salt
  • 3 leafy stalks fresh basil

Directions

  1. In large skillet, heat olive oil over medium heat. 
  2. Add garlic, and cook until edges just turn golden, about 1 minute. 
  3. Season with red pepper flakes, then add tomatoes. 
  4. Add 1 cup hot water to tomato can, swirl then add to pan. 
  5. Bring to simmer, and add salt and basil. Cook until slightly thickened, about 15 minutes. 
  6. Remove from heat and discard basil.

Cacio e Pepe Cheese Puffs

  • 1 cup whole milk
  • 1/4 pound (1 stick) unsalted butter 
  • Kosher salt and freshly ground black pepper 
  • 1 cup all-purpose flour 
  • 4 extra-large eggs 
  • 1/2 cup freshly grated aged Italian Pecorino cheese, plus extra for sprinkling 
  • 1/2 cup freshly grated Italian Parmesan cheese 
  • 1 extra-large egg beaten with 1 teaspoon water or milk, for egg wash 
Directions

  1. Preheat the oven to 425 degrees F. Line 2 baking sheets with parchment paper.
  2. In a saucepan, heat the milk, butter, 1 t
  3. easpoon salt, and 1 teaspoon pepper over medium heat, just until scalded. 
  4. Add the flour all at once and beat it vigorously with a wooden spoon until the mixture comes together. 
  5. Lower the heat and cook, stirring constantly, for 2 minutes. 
  6. Dump the mixture into the bowl of a food processor fitted with the steel blade. Immediately add the eggs, Pecorino, and Parmesan and pulse until the eggs are incorporated and the dough is smooth and thick.
  7. Spoon the mixture into a pastry bag fitted with a large, plain 5/8-inch round pastry tip. 
  8. Pipe the dough in mounds 1 1/4 inches wide and 3/4 inch high (1 inch apart) onto the prepared baking sheets. 
  9. With a wet finger, lightly press down the swirl at the top of each puff. (You can also use two spoons to scoop the mixture and shape the puffs with damp fingers.) 
  10. Brush the top of each puff lightly with the egg wash, and sprinkle with Pecorino, salt, and pepper. 
  11. Bake for 15 to 20 minutes, until golden brown outside but still soft inside. Serve hot.

Healthier Chicken Parmesan - Giada



Serves:4

PREP TIME 10 minutes

COOK TIME 8 minutes

TOTAL TIME 18 minutes

INGREDIENTS:

  • 1 tablespoon olive oil
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon chopped fresh Italian parsley
  • 4 chicken cutlets about 3 ounces each
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¾ cup marinara sauce homemade or a good quality jarred sauce
  • ¼ cup shredded mozzarella cheese
  • 8 teaspoons grated Parmesan cheese
  • 1 tablespoon unsalted butter cut into pieces

INSTRUCTIONS:

  1. Preheat the oven to 500°F.
  2. In a small bowl, stir the oil, thyme, rosemary, and parsley together to blend. Brush both sides of the cutlets with the herb oil and sprinkle with the salt and pepper.
  3. Heat a large, heavy ovenproof skillet over high heat. Add the cutlets and cook just until browned, about 1 minute per side. Remove from the heat.
  4. Spoon the marinara sauce over and around the cutlets. Sprinkle 1 tablespoon of mozzarella over each cutlet, then sprinkle each with 2 teaspoons of Parmesan. Dot the tops with the butter pieces, and bake until the cheese melts and the chicken is cooked through, about 5 minutes. Serve hot.

Jamie Oliver - Pasta Sauce

 



Ingredients:

  • 1 bunch of fresh basil
  • 1 medium onion
  • 2 cloves of garlic
  • 2 8-ounce cans of chopped tomatoes (use fresh equivalent if in season)
  • 1 tablespoon of red wine or balsamic vinegar
  • 1 box of pasta (16 ounces)
  • Olive oil
  • A small wedge of parmesan cheese

Method:

  1. Pick the basil leaves onto a cutting board (reserving a few baby leaves to garnish), then roughly chop the remaining leaves and finely chop the stalks.
  2. Peel and finely slice the onion and garlic. If using fresh, cut the tomatoes in half, then roughly chop them or carefully open the cans of tomatoes.
  3. Put a saucepan on a medium heat and add 1 tablespoon of olive oil and the onion, then cook for around 7 minutes, or until soft and lightly golden.
  4. Stir in the garlic and basil stalks for a few minutes, then add the fresh or tinned tomatoes and the vinegar.
  5. Season with a tiny pinch of salt and pepper, then continue cooking for around 15 minutes, stirring occasionally.
  6. Stir in the chopped basil leaves, then reduce to low and leave to tick away. Meanwhile…
  7. Carefully fill a large pot three-quarters of the way up with boiling water, add a tiny pinch of salt and bring back to the boil.
  8. Add the spaghetti and cook according to packet instructions – you want to cook your pasta until it is al dente. This translates as ‘to the tooth’ and means that it should be soft enough to eat, but still have a bit of a bite and firmness to it. Use the timings on the packet instructions as a guide, but try some just before the time is up to make sure it’s perfectly cooked.
  9. Once the pasta is done, ladle out and reserve a cup of the cooking water and keep it to one side, then drain in a colander over the sink and tip the spaghetti back into the pot.
  10. Stir the spaghetti into the sauce, adding a splash of the pasta water to loosen, if needed.
  11. Serve with the reserved basil leaves sprinkled over the top and use a microplane to finely grate the cheese, then sprinkle over.

Sautéed Brussels Sprouts



Serves 4

PREP TIME - 5 minutes

COOK TIME - 15 minutes


INGREDIENTS

  • 1 pound Brussels sprouts
  • 4 tablespoons olive oil, divided
  • 1/2 teaspoon teaspoon kosher salt, divided, plus more as needed

INSTRUCTIONS

  1. Trim 1 pound Brussels sprouts and cut in half lengthwise. Heat 2 tablespoons of the olive oil in a large frying pan over medium-high heat until shimmering. Add half the Brussels sprouts and arrange them cut-side down. Season with 1/4 teaspoon of the kosher salt and cook undisturbed until the bottoms are golden brown, about 2 minutes.
  2. Toss Brussels sprouts. Continue to cook, tossing occasionally, until the sprouts are crisp-tender and deep golden brown, 4 to 5 minutes more. Transfer to a serving dish. Repeat with the remaining olive oil, Brussels sprouts, and salt. Sprinkle the finished sprouts with more salt as needed before serving.

Storage: Leftovers can be refrigerated in an airtight container up to 4 days.

GARLIC SAUTEED CAULIFLOWER

 INGREDIENTS

  • 1 head cauliflower, cut into florets
  • 1⁄4 cup extra virgin olive oil (you can probably use less)
  • 4 garlic cloves, minced
  • crushed red chili pepper, to taste
  • salt

DIRECTIONS
  1. Cook cauliflower in a large pot of salted, boiling water until barely crisp-tender; drain well.
  2. In a large skillet over medium heat, warm the oil. Saute' the garlic and desired amount of red chile pepper until the garlic just begins to brown (being careful to not let it burn!).
  3. Add the cauliflower and cook a few minutes, stirring, until completely coated in oil.
  4. Sprinkle with kosher salt to taste and serve.

Crispy Salt and Pepper Potatoes

 YIELD4 servings

INGREDIENTS

  • 2 large egg whites
  • 1 pound new potatoes (about 1 inch in diameter)
  • 2 teaspoons kosher salt
  • ¾ teaspoon finely ground black pepper
  • 1 teaspoon finely chopped rosemary
  • 1 teaspoon finely chopped thyme
  • 1 teaspoon finely chopped parsley

PREPARATION

  1. Preheat oven to 400°F and line a rimmed baking sheet with parchment. 
  2. In a large bowl, whisk the egg whites until foamy (there shouldn’t be any liquid whites in the bowl). 
  3. Add the potatoes and toss until they’re well coated with the egg whites, then transfer to a strainer or colander and let the excess whites drain. 
  4. Season the potatoes with the salt, pepper, and herbs. Scatter the potatoes on the baking sheet (make sure they’re not touching) and roast until the potatoes are very crispy and tender when poked with a knife, 15 to 20 minutes (depending on the size of the potatoes).

Transfer to a bowl and serve.
