Whipped Brie with Honey Dip

Some tips-


1) make sure Brie is really cold to get all the rind off


2) after cubing, let sit out so it gets to room temp before whipping.


3) I used a food processor but Thomas Keller and many other recipes use a mixer with paddle attachment.


4) I used 2x 8oz wheels of Brie and reserved half for another topping. You need to have enough Brie when you are whipping it to get it to a good consistency, so I would do 2-3 wheels at a time.


5) Beat or whip the cheese on medium speed until it becomes smooth and creamy, scraping down the sides as needed, about 5-10 minutes.


6) topping options are endless, I used a honey comb, a drizzle of more honey and rosemary here but will post another idea soon.

Orzo With Shrimp and Olives

Orzo With Shrimp and Olives

  • 1 cup orzo
  • ½ tsp. kosher salt, plus more for cooking orzo
  • 1 cup sliced sweet mini peppers
  • ¼ cup olive oil, plus more for drizzling
  • ¼ cup sun-dried tomatoes in oil, drained and chopped
  • 1 lb. peeled, deveined raw jumbo shrimp
  • ½ cup pitted kalamata olives, chopped
  • 1 Tbsp. chopped fresh oregano
  • 2 tsp. lemon zest plus 3 Tbsp. fresh juice, divided
  • 1 cup store-bought tzatziki 

BRING a medium saucepan of salted water to a boil over high. Cook orzo until al dente, about 7 minutes. Drain; rinse under cold water for about 30 seconds to stop cooking. Transfer to a large bowl and stir in salt.

MEANWHILE, preheat broiler with oven rack 5 inches from heat. Place peppers, oil, and tomatoes in a large broiler-safe skillet over medium. Cook, stirring often, until mixture sizzles and tomatoes puff up slightly, 3 to 4 minutes. Stir in shrimp, olives, oregano, and 2 tablespoons lemon juice.

TRANSFER skillet to oven and broil, stirring halfway through, until shrimp are just opaque, 4 to 6 minutes. Stir orzo, lemon zest, and remaining 1 tablespoon lemon juice into shrimp mixture in skillet. Serve drizzled with oil and topped with tzatziki.

Schnitzel with Lemon Caper Preseco Sauce

What you need:


SCHNITZEL

  • 1 chicken breast
  • 200g flour
  • 2 eggs
  • 30ish ml milk
  • 200g panko crumbs
  •  Veg oil to coat the bottom of a non-stick pan


MASH POTATOES

  • 2 potatoes, any type
  • 1 tsp garlic, minced
  • Salt to taste


LEMON, CAPER, PROSECO SAUCE

• 80g butter

• 2 tsp garlic, minced

• 2 tsp capers, with brine

• ½ lemon zest and juice

• 1 cup parsley, finely chopped

• 50ml prosecco, optional

• Salt to taste


What to do:

1. Cut the chicken breast lengthways so your left with two pancake shaped chicken breasts. Place cling film on a chopping board and another layer on top. Bash it with a rolling pin so it becomes a uniform thickness.

2. To crumb, completely dust in flour, followed by the egg wash of the eggs and milk, and finally the panko crumbs. Make sure to press really heard down the panko sticks to the schnitz. Set aside.

3. Quarter the potatoes and cook in boiling water.

4. For the sauce, melt the butter before adding the capers, garlic, lemon zest and juice and parsley, salt to taste, and add the prosecco. Keep sauce warm but don’t keep cooking.

5. Meanwhile warm oil in non-stick pan and cook the schnitzels one at a time, let rest on wire rack or paper towel.

6. Meanwhile drain potatoes after 14 minutes and place back in pot, add the butter, garlic and milk. Mash and mix in parsley at the end.

Surf and Turf, French Style



Saumon aux lentilles is a classic coupling of rich fish and earthy pulses.


Niki Segnit, author of The Flavor Thesaurus (2012), has a fresh take on combining the bounty of the sea with that of the land: “Surf ‘n’ turf is all very well, but fish goes best with ingredients that truly taste of turf, not just graze on it . . .” The French duo of buttery salmon and gently braised lentils, with its deeply comforting textures and rich, savory flavors, proves that she was onto something.


That said, my first attempt missed the mark. A fan of efficiency, I was drawn to an en papillote scenario: Combine drained canned lentils with vegetables on a sheet of foil, perch a salmon fillet on top, enclose the lot, and roast it in the oven. But freed from its steamy packet, the salmon was pallid and its skin squidgy. The lentils, sodden with juices, had lost their delicate earthiness. I needed to cook the two parts separately.


Lentilles du Puy (French green lentils), a variety grown in the mineral-rich volcanic soil of the Auvergne region, were my choice, not just because of their provenance, but also because they hold their shape when cooked. Lentils can be boiled like pasta, but the excess water washes away flavor. Instead, I sautéed a mirepoix base and then added the lentils with just enough water to be absorbed by the time they cooked through. A spoonful of tomato paste augmented the lentils’ meaty depth, and garlic and thyme added unmistakable Gallic flair.


For the salmon, I used our revolutionary cold‑start technique: Place brined fillets skin side down in an unheated nonstick skillet that’s been strewn with salt and pepper (no oil) and turn on the heat; soon the fish releases some of the fat that lies just beneath the skin, crisping it. When the bottoms of the fillets start to turn opaque, flip them to brown the flesh side in the rendered fat.


To finish, I brightened the lentils with sherry vinegar and Dijon mustard; a glug of fresh extra-virgin olive oil added grassy top notes.


SAUMON AUX LENTILLES


(PAN-SEARED SALMON WITH BRAISED LENTILLES DU PUY)

TOTAL TIME: 1½ HOURS


To ensure uniform cooking, buy a 1½-pound center‑cut salmon fillet and cut it into four pieces. Using skin-on salmon is important here, as we rely on the fat underneath the skin as the cooking medium. If using wild salmon, check for doneness earlier and cook it until it registers 120 degrees. Small, olive-green lentilles du Puy are worth seeking out for their meaty texture, but if you can’t find them, substitute another small green lentil. Do not use red or brown lentils.

1. FOR THE LENTILS: Heat 1 tablespoon oil in medium saucepan over medium heat until shimmering. Add onion, celery, carrot, and salt and stir to coat vegetables. Cover and cook, stirring occasionally, until vegetables are softened but not browned, 8 to 10 minutes. Add garlic, tomato paste, thyme, and pepper and cook, stirring constantly, until fragrant, about 2 minutes. Stir in water and lentils. Increase heat and bring to boil. Adjust heat to simmer. Cover and cook, stirring occasionally, until lentils are tender but not mushy and have consistency of thick risotto, 40 to 50 minutes. Remove from heat and keep covered.


2. FOR THE SALMON: While lentils are cooking, dissolve ¼ cup salt in 1 quart water in narrow container. Submerge salmon in brine and let stand for 15 minutes. Remove salmon from brine and pat dry with paper towels. Allow to stand while lentils finish cooking.


3. Sprinkle bottom of 12-inch nonstick skillet evenly with ½ teaspoon salt and ½ teaspoon pepper. Place fillets, skin side down, in skillet and sprinkle tops of fillets with remaining ¼ teaspoon salt and remaining ¼ teaspoon pepper. Heat skillet over medium-high heat and cook fillets, without moving them, until fat begins to render, skin begins to brown, and bottom ¼ inch of fillets turns opaque, 6 to 8 minutes.


4. Using tongs and thin spatula, flip fillets and continue to cook without moving them until centers are still translucent when checked with tip of paring knife and register 125 degrees (for medium-rare), 5 to 8 minutes longer. Transfer fillets, skin side up, to clean plate.


5. Warm lentils briefly if necessary. Stir in vinegar, mustard, and remaining 1 tablespoon oil. Season with salt, pepper, and vinegar to taste. Divide lentils among wide, shallow serving bowls. Arrange salmon skin side up on lentils and serve.

How to Make Scrambled Eggs Perfectly Every Time

 

1. Crack, season, and whisk in a mixing bowl

Crack three fresh eggs into a medium bowl and whisk them with a good pinch of kosher salt until just incorporated. As long as you’re whisking, throw in some black pepper or cayenne pepper (or both!) if you like.

3. Add your egg mixture to the pan

Pour the whisked eggs into the skillet and immediately start pushing them across the bottom of the nonstick pan with a rubber spatula.

4. Keep the eggs moving

Cheesy Chicken Meatballs

Ingredients

  • 1 pound ground chicken
  • 2 eggs, lightly beaten
  • ¼ cup roasted garlic light cream cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon dry bread crumbs
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon garlic powder
  • 1 ½ tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper


Directions

  1. Preheat an oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with aluminum foil, and spray with cooking spray.
  2. Combine the chicken, eggs, cream cheese, Parmesan cheese, bread crumbs, red pepper flakes, Italian seasoning, garlic powder, vegetable oil, salt, and pepper in a large bowl; mix well. Form mixture into 20 meatballs; place on prepared pan.
  3. Bake in center of preheated oven until juices run clear, 17 to 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Chicken rice with tomato, basil and mozzarella

Ingredients

  • Olive oil to fry
  • 500g skinless chicken thigh fillets, roughly chopped
  • 1 onion, chopped
  • 1 red pepper, deseeded and chopped
  • 1 red chilli, deseeded and sliced (optional)
  • 4 garlic cloves, sliced
  • 125ml white wine
  • 1 bay leaf
  • 2 thyme sprigs
  • 400g tin chopped tomatoes
  • 600ml chicken stock
  • 50g pitted black olives
  • 350g long grain rice
  • 100g mozzarella, torn

Method

  1. Put a large lidded saucepan over a medium-high heat and add a drizzle of oil. Add the chicken and cook for 3-5 minutes, stirring occasionally, until browned all over, then lift out and set aside. Add another glug of oil followed by the onion, pepper, chilli (if using) and garlic with a pinch of salt. Turn the heat down to low-medium and cook for 10 minutes, stirring often.
  2. Put the chicken back in the pan along with the wine and herbs. Leave to simmer for 3 minutes until reduced by half, then add the chopped tomatoes, stock and olives. Turn the heat to low, cover and simmer for 10 minutes. Stir in the rice and simmer for a further 10 minutes uncovered.
  3. Meanwhile, make a quick pesto by grinding the pine nuts, garlic, parmesan and chopped basil into a paste in a pestle and mortar (or pulse briefly in a small processor). Stir in the oil, then taste and season with salt, pepper and a dash of lemon juice or cider vinegar.
  4. Scatter the mozzarella over the rice, then cover and leave to gently cook for a final 5 minutes. Drizzle over the pesto and serve.
