Tinga de Pollo (Chicken with Chipotle and Onions)

Article

Ingredients

Yield:4 servings (about 3 cups)

FOR THE CHICKEN

  • 2 pounds bone-in chicken legs, breasts or a combination
  • ½ medium white onion
  • 1 celery stalk, cut into 2-inch pieces
  • 2 small carrots, cut into 2-inch pieces

FOR THE SAUCE

  • ¼ cup vegetable oil
  • 1 medium white onion, halved and thinly sliced
  • ¾ cup canned crushed tomatoes
  • 3 chipotles in adobo with sauce (⅓ cup)
  • 2 garlic cloves, peeled
  • Salt and freshly ground black pepper

Preparation

Step 1

Cook the chicken: Combine the chicken, onion, celery and carrots in a large saucepan and add 4 cups cold water. Add more water if needed to cover the solids. Bring to a boil over high heat, then reduce the heat to maintain a simmer. Cook until the chicken is very tender and falling off the bones, about 45 minutes.

Step 2

Transfer the chicken to a bowl. When cool enough to handle, discard the skin and bones, then pull the meat into very fine shreds. Strain the broth and reserve for Tamales de Pollo or another use.

Step 3

While the chicken cooks, make the sauce: Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. While the onion cooks, puree the tomatoes, chipotles and garlic in a blender until smooth. Add to the pan and bring to a boil. Reduce the heat to simmer. Cook, stirring occasionally, until the sauce thickens, 2 to 3 minutes.

Step 4

Add the chicken to the sauce and gently fold to evenly coat and heat through. Season to taste with salt and pepper and serve immediately or cool to room temperature to use a filling for Tamales de Pollo.

Burst Cherry Tomato Orzotto

Article

  • Yield: 4 to 6 servings
  • Total Time 50 minutes

Ingredients

  • 3 tablespoons olive oil
  • 1 large shallot, chopped (about ⅓ cup)
  • Salt
  • 1 tablespoon grated garlic, from 3 to 4 large cloves
  • ¼ to ½ teaspoon crushed red pepper
  • 1 ½ pounds cherry tomatoes
  • 1 cup tightly packed fresh basil leaves, roughly chopped, plus 1 sprig
  • 1 pound orzo
  • 1 quart (4 cups) low-sodium vegetable or chicken broth
  • ⅔ cup grated Parmesan, plus more for serving
  • 1 tablespoon unsalted butter
  • 1 ½ teaspoons fresh lemon juice

Step 1

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium heat for about 30 seconds. Add the shallot and 1 teaspoon salt and cook, stirring often, until the shallot is translucent and fragrant, 2 to 3 minutes. Add the garlic and crushed red pepper and cook, stirring constantly, until fragrant, about 30 seconds more.

Step 2

Add the tomatoes, basil sprig and 1 ¼ cups water and cover the pot. Increase the heat to medium-high and let cook, covered, until the tomatoes are very soft and easily burst when pressed with a wooden spoon or spatula, about 8 minutes.

Step 3

Use the back of a wooden spoon or spatula to press the tomatoes against the side of the pot until all the tomatoes are broken down. Adjust the heat as needed to maintain a steady yet gentle boil.

Step 4

Cover and continue to cook, stirring occasionally, until the tomato liquid has thickened, slightly deepened in color and reduced by about half, 6 to 10 minutes. The mixture will go from very brothy to a tomato soup-like texture.

Step 5

Stir in the orzo, broth and ¼ teaspoon salt and bring to a boil over high heat, 4 to 5 minutes. Lower the heat to maintain a simmer and cook, stirring every minute or two and making sure to scrape the bottom of the pot to prevent sticking, until the orzo is tender and saucy, 9 to 10 minutes more.

Step 6

Remove the pot from the heat and discard the basil sprig. Stir in the Parmesan, butter, lemon juice and chopped basil until silky and evenly combined. Season to taste with salt as needed. Serve immediately, topped with more Parmesan as desired.

CROCKPOT GARLIC BUTTER BONE BROTH POTATOES

If you think potatoes have to disappear when you’re trying to lose fat, think again. These are buttery, garlicky, insanely easy, and the crockpot does almost all the work.

I ate potatoes while losing over 100 pounds after 40 because sustainable fat loss is not about banning every food you love. It’s about learning how to build meals that actually work for you.

INGREDIENTS

  • * 3 lbs small to medium russet potatoes, scrubbed well and left whole
  • * ½ cup Kettle & Fire Chicken Bone Broth @kettleandfire
  • * 2 to 4 tbsp unsalted butter, cut into small cubes
  • * 1 tsp garlic powder
  • * ½ to 1 tsp coarse kosher salt
  • * Fresh cracked black pepper

OPTIONAL TOPPINGS

* Plain Greek yogurt or sour cream

* Fresh chopped chives or green onions

* Extra black pepper

HOW TO MAKE THEM

1. Wash and scrub the potatoes well, then pat them dry.

2. Pour ½ cup Kettle & Fire bone broth into the bottom of your crockpot.

3. Add the whole potatoes.

4. Sprinkle with garlic powder, salt and black pepper.

5. Scatter the butter cubes over and around the potatoes.

6. Cover and cook:

  • HIGH: 3½ to 4½ hours
  • LOW: 6 to 7 hours

They’re ready when a fork slides easily through the center.

7. Gently roll the potatoes through that garlicky butter + bone broth mixture at the bottom.

8. Split them open and spoon some of that savory broth right into the fluffy center. 🤤

Finish with Greek yogurt or sour cream and fresh chives.

FAT-LOSS WARRIOR TIP: Pair one of these with a big serving of lean protein and veggies and you’ve got a ridiculously satisfying meal without making dinner complicated.

  • * 5 Italian sausages
  • * 2 tbsp olive oil
  • * 1 onion finely diced
  • * 2 garlic cloves
  • * 1 tsp fennel seeds
  • * Fresh chilli (optional)
  • * White bold beans @boldbeanco
  • * 1 tin chopped tomatoes

Crispy Chicken Cutlets with Creamy Vodka Pastina

Yield: 4 servings | Prep time: 20 mins | Cook time: 25 mins

Ingredients

Chicken Cutlets

  • 1.5 lbs chicken breasts, halved horizontally into thin cutlets
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Panko breadcrumbs + 1/2 cup grated Parmesan
  • 1 tsp garlic powder, 1 tsp Italian seasoning, salt, and black pepper
  • Neutral oil or olive oil spray (depending on cooking method)
  • Creamy Vodka Pastina

  • 1 cup pastina (star-shaped, acini di pepe, or stelline)
  • 2 tbsp olive oil + 1 tbsp butter
  • 1 small shallot, finely diced
  • 4 garlic cloves, minced
  • 3 tbsp tomato paste
  • 1/4 cup vodka
  • 2 to 2.5 cups warm chicken or vegetable broth
  • 1/3 cup heavy cream
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • Fresh basil and red pepper flakes (for garnish)

Instructions

Step 1: Bread the Cutlets

Set up three wide bowls:

Bowl 1: Flour mixed with salt, pepper, garlic powder, and Italian seasoning.

Bowl 2: Beaten eggs.

Bowl 3: Panko breadcrumbs combined with 1/2 cup grated Parmesan.

Dredge each cutlet in flour, dip in egg, and press firmly into the Panko mixture until fully coated.

Step 2: Cook the Chicken Cutlets

Choose your preferred cooking method below:

Option A: Traditional Pan-Frying Heat 3–4 tbsp oil in a large skillet over medium-high heat. Fry cutlets for 3–4 minutes per side until deep golden brown and the internal temperature reaches 165°F (74°C). Drain on a wire rack or paper towels, then slice into strips.

Option B: Air-Fryer Preheat air-fryer to 400°F (200°C). Spray the basket and cutlets lightly with oil spray. Air-fry for 10–12 minutes, flipping halfway through and spraying again, until crisp and cooked to 165°F (74°C).

Option C: Oven-Baking Preheat oven to 425°F (220°C). For maximum crunch, toast the Panko in a dry pan until lightly golden before breading. Place cutlets on a wire rack set over a baking sheet, lightly spray with oil, and bake for 15–18 minutes.

Step 3: Build the Vodka Base

In a deep skillet or heavy pot, heat olive oil and butter over medium heat. Sauté diced shallot for 3 minutes until soft, then add garlic for 1 minute. Stir in tomato paste and cook for 2–3 minutes until it deepens to a dark red color. Pour in the vodka to deglaze, scraping up any browned bits, and simmer for 2 minutes until reduced.

Step 4: Cook the Pastina

Add dry pastina directly to the pan and stir to coat. Pour in 2 cups of warm broth. Simmer over medium-low heat, stirring frequently so the pasta doesn't stick. Cook for 7–9 minutes until tender, adding remaining broth if needed to maintain a saucy consistency.

Step 5: Finish the Sauce & Plate

Turn heat to low. Stir in heavy cream and 1/2 cup Parmigiano-Reggiano until rich and glossy. Season with salt, pepper, and red pepper flakes to taste. Spoon pastina into shallow bowls, top with sliced chicken cutlets, fresh basil, extra Parmesan, and a drizzle of olive oil.

One-Pan Street-Corn-Inspired Chicken and Rice

Article

  • Servings 4
  • Prep time 15minutes
  • Cook time 35minutes

Ingredients

  • 1 1⁄2 teaspoons chili powder
  • 1 1⁄2 teaspoons kosher salt
  • 1 1⁄2 teaspoons smoked paprika
  • 1⁄2 teaspoon ground cumin
  • 1⁄4 teaspoon cayenne pepper (optional)
  • 1 1⁄2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 cup jasmine or basmati rice, rinsed
  • 5 garlic cloves, peeled and minced (about 5 teaspoons)
  • 12 ounces frozen corn (I like to use fire roasted)
  • 13.5 -ounce can light coconut milk (1 1/2 cups)
  • up to 2 cups low-sodium chicken broth
  • juice of 1 lime
  • 3⁄4 cup crumbled cotija or feta cheese, for topping (optional)
  • roughly chopped cilantro leaves, for garnish

Directions

  1. Combine the chili powder, salt, paprika, cumin, and cayenne pepper in a small bowl. Add the chicken thighs to a large bowl, add half of the spice mix, and toss to evenly coat.
  2. Heat the oil in a large skillet over medium heat. Once the oil is shimmering, add the chicken thighs in one single layer (you may need to cook in two batches depending on the size of your pan). Cook until crisp on each side and each reaches an internal temperature of 165°F, about 6 to 8 minutes per side. Transfer to a large dish, leaving any remaining oil in the skillet.
  3. To the same skillet, add the rice and cook, stirring frequently, until toasted, about 1 minute. Add the garlic, corn, and the remaining spice mix and mix well. Continue cooking, stirring occasionally, to warm the corn and brown it slightly, 2 to 3 minutes.
  4. Stir in the coconut milk and 1 1/2 cups of the broth, turn the heat to medium-high, and bring to a light boil. Reduce the heat to medium-low, cover, and cook until the rice is tender, 14 to 18 minutes, stirring halfway through to prevent sticking (Note: If needed while the rice cooks, stir in the remaining 1/2 cup broth).
  5. Squeeze the lime juice over the rice and mix. Return the cooked chicken on top of the rice and sprinkle with the crumbled cotija or feta (if using) and chopped cilantro. To serve, evenly divide among 4 plates.

Notes

Store it: Refrigerate in a sealed container for up to 3 days or freeze for up to 3 months.

Reheat it: From the refrigerator, microwave until warm, 1 to 2 minutes, or return to a skillet over medium heat. From the freezer, thaw in the refrigerator overnight, then microwave in 30-second increments until warm or follow the same skillet instructions.

Coconut Milk: swap for whole milk or oat milk. You can also use half of a 13.5-ounce full-fat coconut milk can plus 3/4 cup additional broth.

Rice: add more veggies into this meal by using half cauliflower rice (about 1 cup) and half white rice (1/2 cup dry). Reduce the broth to 1/2 cup and add the cauliflower rice when the rice is halfway through cooking.

Vegetarian: swap the chicken for a block of firm tofu, pressed and cut into 1-inch cubes. Toss in the same spice mix and sear in the skillet the same way. You can also do this with chickpeas, or roast them separately in the oven with the spices.

Dairy-free: Easily make DF by omitting the optional cheese or opting for dairy-free cheese.

In Step 4, it is crucial that the liquid comes to a complete boil before lowering the heat and covering the skillet so the rice can cook. Add additional broth (up to 1⁄2 cup more) if needed. If you struggle with cooking your rice fully with one pan meals, pay extra attention here! You can also always cover your skillet off heat for about 10 minutes to allow for extra absorption at the end.
