Preparation

  • 1(15-ounce) can black or pinto beans
  • 1large tomato, coarsely chopped
  • 2teaspoons lime juice, or apple cider vinegar 
  • Hot sauce, for drizzling (optional)
  • 6burrito-size (about 10-inch) flour tortillas
  • 2cups (8 ounces) shredded Monterey Jack or Mexican blend cheese


Preparation

Step 1

In a large skillet, press the beef into an even layer to fill the skillet. Sprinkle with the onion. Cook over medium-high, undisturbed, until the meat is deeply browned underneath, 6 to 8 minutes.

Step 2

Sprinkle with the cumin, smoked paprika and oregano, and season with salt and pepper. Break up the beef into small pieces, then cook, stirring occasionally, until the onion is softened and the spices are fragrant, 2 to 4 minutes.

Step 3

Add the beans, including the liquid, and the tomato and simmer, stirring and scraping up browned bits, until the liquid has evaporated and the mixture starts to sizzle, 8 to 10 minutes. Turn off the heat, stir in the lime juice and season with salt and pepper.

Step 4

Arrange the tortillas on a clean work surface. Sprinkle half the cheese across the center of the tortillas, left to right, leaving a 1-inch border. Top each with ⅔ cup of the beef-bean mixture, followed by the remaining cheese. Drizzle on hot sauce, if using.

Step 5

Fold the tortilla’s short sides over the filling, then fold the bottom of the tortilla snugly over the filling. Tightly roll away from you until the burrito is sealed. Repeat with the other tortillas.

Step 6

When ready to eat, in a nonstick skillet over medium, place the burritos seam side down. Cook, turning occasionally, until golden all over, 3 to 5 minutes. Serve with desired toppings.

Tip

To make ahead, prepare through Step 5. Let cool slightly, then wrap in  aluminum foil. Refrigerate for up to 24 hours or freeze for up to 3 months. To reheat, remove the foil and wrap the burrito in a damp paper towel. Microwave, seam side down, until warm, 1 to 4 minutes. Remove the towel and continue to Step 6.

Preparation

Step 1

Heat the oil over high in a large heavy pot and add the turkey meat. Cook until lightly browned, about 5 minutes, chopping down and stirring with the side of a heavy kitchen spoon to break up any lumps.

Step 2

Add the onions, garlic, sweet pepper, celery, jalapeño, oregano, bay leaves, chili powder and cumin. Stir to blend well. Cook for 5 minutes.

Step 3

Add the tomatoes, chicken broth, salt and pepper to taste. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15 minutes.

Step 4

Add the drained beans and cook, stirring occasionally, for 10 minutes longer. Serve in bowls with Cheddar, and sour cream and lime wedges, if desired.

Broken Plane Cocktail

Ingredients

  • 1 ½ ounces London dry gin
  • 1 ½ ounces elderflower liqueur
  • 1 ½ ounces Amaro Nonino
  • 1 ½ ounces fresh lemon juice
  • 2 dashes orange bitters
  • Lemon twist, for garnish
  • 1 fresh thyme sprig, for garnish
  • 1 lemon verbena leaf, for garnish

Directions

  1. Add ice to a shaker.
  2. Combine the gin, elderflower liqueur, Amaro Nonino, lemon juice, and orange bitters in a shaker with the ice.
  3. Shake vigorously for 15 seconds.
  4. Strain the drink into a chilled coupe glass.
  5. Garnish with a lemon twist, fresh thyme sprig, and a lemon verbena leaf.

Instructions

  1. Combine the rice with 1 1/4 cups of the chicken broth in a microwave-safe container. Cover and microwave for 10 minutes.
  2. Meanwhile, sprinkle the chicken tenders with the paprika and some salt and pepper. Heat 2 tablespoons of the olive oil in a large heavy pan or Dutch oven over medium-high heat until starting to shimmer. Add the chicken and cook for 2 minutes per side, until lightly browned. Transfer to a plate and set aside.

  4. Add the remaining 1 cup chicken broth, bring to a boil, and deglaze the pan by scraping up any browned bits along the bottom, 1 minute or so.
  5. Stir in the tomatoes, partly cooked rice, and chicken, bring to a simmer, reduce the heat to medium, and cook, loosely covered, for 8 minutes more or until the liquid is absorbed.
  6. Add the peas and heat through for 2 minutes. Add salt and pepper to taste, toss with the parsley, and serve hot, sprinkled with a little more parsley.

Crispy Hot Honey Feta Chicken

Ingredients 
  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce (I like Frank's or Cholula)
  • 3/4 tsp Chilli Flakes
  • 2x 250g/9oz Chicken Breasts
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs, beaten
  • 65g / 1 cup Panko Breadcrumbs
  • Veg Oil, as needed (6-8 tbsp)
  • 200g / 7oz Feta, crumbled
Instructions 
  1. Combine the honey, hot sauce and chilli flakes in a bowl and warm in the microwave (20 seconds or so). Stir then leave to cool. You can also do this on the stove in a small pot (just bring to a simmer then remove and cool). You can easily adjust the heat with chilli flakes/hot sauce if desired.
  2. Horizontally slice the chicken breasts right through the centre to create 4 even-sized breasts. In a small pot or bowl combine the paprika, salt, onion powder, garlic powder, oregano, cayenne and black pepper.
  3. Line up 3 large shallow dishes and place a large tray at the end. The first bowl is flour + half of the seasoning mix, the second is beaten egg and the 3rd is the Panko with the rest of the seasoning. One by one take the chicken and dredge through the flour, into the egg, then the breadcrumbs and finish by placing on the tray. Make sure you thoroughly coat the chicken at each stage (namely the breadcrumbs).
  4. Add enough oil to coat the base of a large pan and place it over medium-high heat. Once the oil is hot enough that a breadcrumb rapidly sizzles, carefully place in the chicken (if you can't fit 4 pieces then work in 2 batches, top up the oil in between if needed). Fry for 3-4 minutes on each side or until deep golden and crispy on the outside and white/piping hot through the centre. Place on a wire rack above the tray.
  5. Add the crumbled feta, covering as much of the chicken as possible, then place under the grill on high until it starts turning golden (it should be buttery soft and a little crisp on top).
  6. Serve with your preferred amount of hot honey drizzled over and enjoy (tightly store leftover honey in the fridge).

Lemon Pesto Rigatoni with Burrata & Roasted Pine Nuts

For the Lemon Pesto:

1 cup fresh basil leaves, packed

1/2 cup freshly grated Parmesan

1/4 cup roasted pine nuts (plus extra for garnish)

1 garlic clove

Zest of 1 lemon

Juice of 1/2 lemon

1/2 cup olive oil (extra virgin)

For the Pasta:

250g (about 1/2 lb) rigatoni

1 ball of fresh burrata

1. Cook the Pasta

Heat 2 tablespoons of butter and the olive oil in a medium skillet over medium. When the mixture is bubbling, shake off any excess flour from the chicken and add to the skillet. Cook, undisturbed, until golden brown, about 4 minutes. Flip the pieces over and continue cooking until cooked through, about 4 more. Transfer the chicken to two serving plates.

Step 3
Add the shallots to the pan and cook, stirring, until softened and lightly caramelized, about 2 minutes. Stir in the tomatoes and ⅓ cup water (this helps create more sauce and helps the tomatoes cook more quickly). Simmer until the sauce is reduced by about half, about 3 minutes.

  • 4cups (32 ounces) chicken broth
  • ¼cup roughly chopped fresh parsley, for serving
Preparation
Step 1
Heat the oven to 400 degrees. Use paper towels to pat the chicken thighs until dry on all sides. Season the chicken with 1 teaspoon each salt, pepper and dried oregano and a pinch of crushed red pepper.

Step 2
Place a large Dutch oven or other heavy-bottomed pot over medium-high heat and add oil. Let oil heat up for a few minutes. Add thighs to the pot, skin side down, and let cook undisturbed until they self-release from the bottom of the pot, about 5 minutes. Remove from the pot and set aside.

Step 3
Cut 1 lemon into ¼-inch-thick slices. Add to the pot and cook until caramelized and softened, about 2 minutes. Remove from the pot and set aside.

Step 4
Add the olives, garlic, shallot and 1 teaspoon each salt, pepper and dried oregano to the pot. Cook over medium-low heat, scraping browned bits from the bottom of the pan, until garlic is fragrant, 2 to 3 minutes. Turn the heat up to high, add the rice and broth to the pot, stir to combine and cover until it comes to a boil, about 5 minutes.

Step 5
Remove the pot from heat, add the browned chicken thighs on top of the rice, skin side up, then cover the chicken thighs with the lemon slices. Place the pot, covered, into the oven and bake until the rice and chicken are fully cooked, 25 to 30 minutes. Serve topped with fresh parsley and a squeeze of lemon juice.

Gochujang Chicken

Ingredients
  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon kosher salt
  • 2 tablespoons gochujang (Korean pepper paste)
  • 2 tablespoons agave syrup or honey
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon neutral oil, such as vegetable or canola
  • 1 to 2 medium scallions, thinly sliced
  • 1 to 2 teaspoons toasted sesame seeds (optional)
Instructions
  • Pat 2 pounds chopped boneless, skinless chicken thighs dry with paper towels. Season all over with 1 teaspoon kosher salt.
  • Whisk 2 tablespoons gochujang, 2 tablespoons agave syrup, 1 tablespoon minced peeled fresh ginger, 1 tablespoon toasted sesame oil, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, and 2 minced garlic cloves together in a small bowl.
  • Heat 1 tablespoon neutral oil in a large 12-inch skillet over medium-high heat until shimmering. Add the chicken in an even layer and cook, stirring occasionally, until browned, about 7 minutes.
  • Stir in the sauce. Continue to cook, turning the chicken to coat with the sauce, until the sauce is thickened and reduced slightly and the chicken is cooked through, 1 to 2 minutes more. Garnish with 1 to 2 thinly sliced medium scallions and 1 to 2 teaspoons toasted sesame seeds if using.
