Creamy, comforting, and packed with flavor, this easy Crockpot Marry Me Chicken Orzo is a family-friendly dinner that takes minimal effort.
Ingredients
- 1.5 lbs chicken breast or chicken thighs, cubed
- 1/2 onion, diced
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup sun-dried tomato oil (from the jar)
- 1 tsp each salt, black pepper, Italian seasoning, paprika, and garlic powder
- 1.5 cups chicken broth
- 1 cup orzo
- 1/2 cup heavy cream
- Handful of fresh spinach
- 1/2 cup grated Parmesan cheese
Directions
1. Add the chicken, diced onion, sun-dried tomatoes, sun-dried tomato oil, salt, pepper, Italian seasoning, paprika, garlic powder, and chicken broth to your crockpot. Stir to combine.
2. Cover and cook on High for 2 hours (if using cubed chicken) or until the chicken is fully cooked and tender.
3. Stir in the orzo and heavy cream. Taste and adjust seasonings as desired.
4. Cover and continue cooking for 25-35 minutes, stirring once or twice, until the orzo is tender.
5. Stir in the Parmesan cheese and fresh spinach until the cheese is melted and the spinach has wilted.
6. Serve warm and enjoy!
Tip: If the mixture becomes too thick while the orzo cooks, add a splash of chicken broth to reach your desired consistency. Garnish with extra Parmesan cheese and fresh basil for an extra pop
