Healthy Ground Beef & Potato Skillet
Why it’s healthy
Uses lean protein for muscle and energy
Potatoes provide fiber, potassium, and long-lasting carbs
One-pan meal = less oil, less mess
Ingredients (serves 3–4)
1 lb lean ground beef (90% lean or higher)
3 medium potatoes, diced (leave skin on for extra fiber)
1 small onion, diced
1 bell pepper, diced (any color)
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp black pepper
½ tsp salt (or to taste)
Optional: chili flakes or cumin for extra flavor
Optional topping: fresh parsley or green onions
Instructions
Cook the potatoes
Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender.
Add veggies
Stir in onion and bell pepper. Cook for 3–4 minutes until softened. Add garlic and cook 30 seconds more.
Brown the beef
Push everything to one side of the pan. Add ground beef, break it up, and cook until browned (about 6–8 minutes).
Season & combine
Add paprika, garlic powder, salt, pepper, and any optional spices. Mix everything together and cook for 2–3 more minutes.
Serve
Top with fresh herbs if you like. Serve on its own or with a side salad.
Easy healthy upgrades
Add spinach or kale at the end for extra greens
Swap half the potatoes for sweet potatoes
Use ground turkey if you want it even leaner
