How to Make Peanut Butter Ramen

  • Cook the noodles. Boil 2 (3-ounce) packs of ramen (save the seasoning packets for another use), reserving 1/2 cup of the cooking water.
  • Make the sauce. Whisk together 1/4 cup peanut butter, 2 tablespoons chili garlic sauce, 2 tablespoons soy sauce, and the reserved hot water until smooth.
  • Toss and serve. Drain the noodles, toss with the sauce until coated, and garnish with thinly sliced scallions and toasted sesame seeds if using.

Tips for Making Peanut Butter Ramen

  • Customize the sauce: Add brown sugar or honey for sweetness; rice vinegar or a squeeze of lime juice for acidity; and grated ginger, garlic, or a drizzle of sesame oil for extra flavor.
  • Add protein to make it a full meal: Try topping the noodles with grilled chicken thighs, sliced seared steak, or crispy pan-fried tofu to bulk it up.
  • Boost it with vegetables: For texture and color, stir-fried snow peas, edamame, or thinly sliced red bell pepper all work well here.
  • Don’t throw away the ramen seasoning packets: Save and use them to quickly flavor egg drop soup or easy dumpling soup.
